Apple Pie Baked Beans

These Apple Pie Baked Beans have been a huge hit at our gatherings! We discovered this savory + sweet side dish at an awesome BBQ joint along Route 66 while on our Oklahoma vacation, and we knew we had to come back home and recreate it for our family and friends!

Ingredients
  • 4 Bacon Strips
  • 2 28 oz cans Bush's Baked Beans, drained
  • 1/2 cup Sweet Baby Ray's Original BBQ Sauce (Or your favorite BBQ sauce that doesn't have added sweetness)
  • 1 can Apple Pie Filling, diced
  • 1 Medium Onion, diced
  • 1 Green Bell Pepper, diced
  • 1/3 cup Brown Sugar
  • 2 tablespoons Worcestershire Sauce
  • 2 tablespoons Mustard
  • 1 teaspoon Chipotle Powder
Instructions
  1. Prep Work

    Dice onion and green bell pepper and set aside.

  2. Saute bacon in skillet on medium heat until crispy. Remove bacon and place on paper towel to drain.  Drain most of the bacon grease from the skillet, leaving a thin coating on the surface of the pan.  Pat bacon dry and then chop coarsely and add to a medium pot. 

  3. Add diced onion and green pepper to skillet and stir to coat. Saute veggies until soft. Add to pot with the bacon.

  4. Drain baked beans and add to pot. Coarsely chop the apple pie filling and add to pot, along with the BBQ sauce,  brown sugar, worcestershire sauce, mustard and chipotle powder. Stir gently and combine all ingredients thoroughly.  Cook until heated throughout.

  5. Let cool a little so no one gets burned, and it's ready to serve!  For parties, transfer to a crock pot or pressure cooker on the warm setting.

This recipe can also be prepared as a one-pot recipe in the pressure cooker!
